For the past several weeks I’ve been on an air fryer roll, trying to air fry just about everything. My new big hit is an air fryer steak. Seriously, who would have thought that air fried steaks would taste this good? And don’t even get me started on the convenience of cooking a steak in an air fryer. No other method comes close in the speed and convenience department. Surely, an air fried steak misses smoky flavor, grill marks and caramelization. But the highly desired meat tenderness and juiciness is there. More than that, an air fried steak does not overcook nearly as much near the surface because the meat does not come in contact with hot metal. The thin wire rack doesn’t count.
Preparing the steak for air frying
While you can just take a steak, put some salt and pepper on it and start frying it, I strongly suggest that you prep the meat first. Trust me, it will make a huge difference. If you have a few days at your disposal, put some salt and pepper on your steaks, throw them on a plate and refrigerate, uncovered. Flip the steaks every 12 hours or so and blot the liquids with a paper towel. The salt will penetrate inside the meat and flavorize it inside out. It will also tenderize it. A flavorful and a tender steak is a superior steak. It works on air fried pork chops as well. This process will also make the meat lose a fair amount of liquid, which will intensify the flavor of the meat. Think of it as a slightly dry-aged steak. It’s a very desirable thing for a steak. A dry-aged steak will also brown better.
If you don’t have a few days before cooking, even a few hours will help. If you don’t have even a few hours, that’s OK. Just make sure to salt the steaks right before cooking as the salt will start to draw out moisture and that will prevent any sort of browning you may get in an air fryer. Isn’t it the case when salting a few hours or days in advance too? Yes, but with longer time frames the meat will have an opportunity to re-absorb some of the lost liquid, and the rest will be evaporated. Humidity in fridges is very low so all that excess water will evaporate rather quickly.
Intermittent resting
Seeing amazing results with letting steaks rest after searing and before finishing them, I wanted to see how that could be implemented with air frying. I could not find a good way to do it. But, most importantly, I realized that there was no reason in doing that. You see, meat fibers shrink quite a lot during searing phase, all because of the meat touching a super hot surface.
That’s not the case in an air fryer. The meat surface temperature does not get hot enough to warrant an intermittent rest time. That’s the reason an air fryer steak does not have that intensely grey, overcooked area near the surface. That’s the reason you don’t see much of caramelization or charring. And that’s the beauty of cooking a steak in an air fryer - you can go from start to finish non-stop, without changing anything. No resting in between, no moving from a hot cast iron pan to a less hot oven.
Butter makes a tastier and a better looking steak
One thing to keep in mind when making an air fryer steak is that the meat surface will dry out during cooking. It’s not a piece of chicken that is protected by a fatty skin. The solution? Butter! Yes, brush some butter on the steak before putting in an air fryer and you are good to go. Just take a look at the picture below of a steak buttered half-way. Do you see the difference between the two halves? That butter will also add a lot of flavor.
How many steaks can you cook in an air fryer?
In my 6.8 quart air fryer I can comfortably fit a couple of trimmed strip loin steaks, or one large rib eye steak for example. I’ve tried fitting in three strip loin steaks but they were too crowded and got poor color, especially on the sides.
Additionally, I suggest cooking your steaks without flipping. If you do, you will get somewhat pale color on both top and bottom sides. If you just keep them on one side, you will get a decent color on top, even some caramelization in certain spots. For me, it's worth it.

Ingredients
- 2 strip loin steaks (1.25" thick; or use any steaks of your choosing)
- 2 tsp salt (plus more to taste)
- 2 tsp black pepper (plus more to taste)
- 2 Tbsp butter (melted)
Instructions
- Sprinkle the steaks with salt and pepper, place on a plate and refrigerate for 2-3 days, uncovered. Flip every 12 hours or so, blotting the juices with a paper towel. This step is recommended for superior tenderness and enhanced flavor, but you can skip it if pressed for time.
- Remove the steaks from the fridge 45-60 minutes before cooking and let them sit at room temperature.
- Brush the steaks with melted butter on both sides, place on the rack of your air fryer. Cook at 410F for 15 minutes, without pre-heating, for medium doneness. Cook for about 1 to 2 minutes less for medium rare and rare respectively, and 1-2 minutes more for medium-well and well done respectively. The times will need to be adjusted further if air frying steaks thicker or thinner than 1.25" thick. These cooking times are approximate, so use an instant read thermometer in conjunction with the table in the Notes section.
- Remove steaks from the air fryer, wrap in foil or wax paper, and let rest for 10 minutes, then serve. Try serving with compound butter, it will add a ton of flavor.

Began using an air fryer around mid-May 2024. This is my first steak.
1 1/2" thick sirloin strip. Seasoned well and stored in a sealed container in fridge for 1 week. Before cooking I buttered steak all around.
On the raised rack I cooked for 15 and checked temp. Low - mid 130s F. Cooked 90 additional seconds. 140s. I was aiming for medium or just barely medium - rare. Turned out more than good enough. Very pleased. Thank you.

Had 2 nice sized NY strips- I followed directions for medium rare and did 13 minutes, no flip. The steaks are nice and crispy and carmalized but mine came out well done (too cooked for me). Next time I will try 8-10 minutes. Otherwise tasty!

I tell everyone that when making anything the first time you need to watch very closely as different air fryers cook differently. Some are more efficient than others and cook hotter, some have cooking racks closer to the heating element than others - all of those affect the cooking. The meat can be thinner or thicker and that will affect the timing. Every recipe should be treated as a guideline and they work for the most part for most but sometimes adjustments will be needed. Caryn, I don't have enough information to know what went wrong with your steak but here are a few things to keep in mind if you want to get a well-browned steak:
the longer it cooks the crispier the skin will be, which means thicker steaks will fare better as they will need to cook longer. Make sure the steak is dry as a wet surface will prevent browning. Leave in the fridge overnight, it will help the surface dry. Let it come to room temp before cooking as the cold steak will sweat in a hot environment and won't brown well. The closer the steak is to the heating element the better it will brown. If yours sits low, try to elevate it. Hope this helps.

Great recipe! We followed the instructions exactly though we did not prep. The steaks were perfectly done cooked on a rack at 400 degrees f for 15 minutes and then resting for 10 minutes! Brilliant!!!

I season my sirloin steaks & coat all over with garlic butter & cook at 400 for 15 minutes without turning & they turn out looking seared on all sides & perfectly tender & delicious each time. I cook mine on a rack in the AirFryer. I’ve never done the 2-3 day before prep .... it’s hard to believe it could be anymore tender & delicious than this. Love the coating with butter idea! I believe that’s definitely the trick, especially for cooking without turning it.

Ok, kinda new to an air fryer, first attempt a rotisserie chicken, turn out wonderfully. This steak was delious, but my cooking error was timing. I know better, but didn't do the finger test on cooking time. I like medium rare, unfortunately this became medium well. My fault completely, besides this it was the best steak I have put in my mouth in years. I highly recommend it, just keep an eye on time. My air fryer only goes to 400', I did about 12minutes no preheat, too long for medium rare with my fryer. I believe checking after 6 minutes would be best. Thanks for a wonderful recipe.

Horrible steak. I love my air fryer for everything but steak. I can do way better on a grill. I followed the recipe exactly, including 3 days dry aging in the refrigerator. Cooked my New York strip steak to medium and it was dry, tough, and lacked flavor. A waste of $20 worth of steak.

I've made steak in my air fryer several times and I liked the results. It definitely wasn't the same as grilled or stove-top steak, but far from horrible. Air drying for three days in the fridge could have dried it out. Could be the meat itself... I've had steaks prepared and grilled with great attention to detail that were tough.

Any steak will work I suppose. I'd use what you normally like to cook. My favorite is striploin. I've also cooked chuck steaks in my air frier, it was good but I picked a nicely marbled one. When picking a steak for air frying, the same principles apply as when picking a steak for grilling.

Hi Victor, Got a question. Do you salt the steaks just once in the beginning or each time you flip them? I cut meat for a living and brought home a couple nicely marbled strips to try this recipe. I just put them in the fridge. I used your air fryer wing recipe (which I love and use often) in my convection oven so I could make more of them for dinner tonight. As usual they were perfect. Hard to say. I've never used an oven with an air fryer in it, it may cook differently. I think the flavor that is created by air frying is the result of the food being cooked close to the heating element so it gets crispy. In an oven it may not be the case. Perhaps try placing food closer to the heating element if possible.

My air fryer has a preheat mode and then air fryer reads add food. Should I proceed and add the steaks to the preheat mode and then when it reads add food pull out the pot and reinsert back to the air fryer?

Great recipe ! But be careful of the cooking times as some air friers are diff. Figuring my steak had not set outside of the fridge for a bit I figured I would have some leeway time but I didn’t lol. Mine were at 145 in about 8 min. So use your thermometers on this one.
I also just seasoned it with kosher salt and fresh ground pepper about a half hour before I put the butter on. Still came out great. But hit with my kids ! I used a ny strip steak in case you are wondering.

On the rack, do I put the steak close to the lid or turn the rack so the steak is closer to the bottom of the pot? I've never cooked a steak. They like their steak well done. Also do I preheat? Thank you. This sounds delicious!

Hi Kathy, mine is closer to the lid, this is the normal position of the rack. Closer to the lid/heating element will make it brown better and be more flavorful. I don't preheat, works great like that.

I cooked the Ny strip, 2” per Victor’s delicious recipe, (unwrapped in fridge 3 days with steak seasoning added. Was cooked at medium rare for 12 minutes. Perfect!) I moved the steak into the instant pot with the crisp lid at 450, flipped at 2 minutes and other side for 2. Excellent charring that looked like grilled steaks.

Seriously delicious steak! I prepped it as per the instructions with kosher salt and pepper and let it sit in the fridge two days. I followed the recipe exactly and it was a hit in my house! Only thing is I accidentally cooked it to well when I intended to go for medium, but it was still delicious. Next time I’ll reduce the time , I used the suggested time above but I find that my air fryer seems to cook things quicker than recipes state. Thanks for the recipe!

I tried one other Air Fryer steak recipe and it wasn't even close. I will be using your recipe for a long time.

Okay, so decided I would come back to rate this whether pass or fail; noticed no one else rating had actually cooked this.
Background on my normal: filet mignon pan seared (take the pants off of anyone...use sparingly) and for other cuts; grill and always rare or med-rare...need it darker?..gladly throw it in the microwave and toss the ketchup also. I don’t mess around with my steak or the impression I intend for it to have.
So, to the point: oh my...You’re a genius! This was the best NY strip I’ve had, pretty sure ever. All we kept saying was “so juicy” in between chomps and gasps for air. I thought my air fryer was the best invention ever and this recipe just sealed it.
Had no time for season and chill, so it got smacked with some McCormick and pepper right out of the fridge and cooked dry (out of butter, next time). Cooked at 400 (mine only goes to 400) for 12 min, could’ve gone 13, maybe 14? but better safe than ketchup.
