Ingredients

  • 4 tomatoes large, ripe

For the garlic citrus dressing

  • 5 cloves garlic tempered (if desired) and pressed
  • 1/4 cup olive oil
  • 1/2 tsp sea salt or to taste
  • 1/2 tsp black pepper ground
  • 1 Tbsp lime juice
  • 1 Tbsp lemon juice
  • 1 Tbsp orange juice
  • 1 tsp honey reduce to 1/2 tsp if your tomatoes are sweet

For the garnish

  • 1/2 Tbsp chopped chives
  • 1/2 Tbsp chopped cilantro or parsley

Instructions

  • Temper the garlic before pressing if desired to take off the harshness. See notes.
  • Combine the ingredients for the dressing in a bowl and whisk well.
  • Cut the tomatoes into wedges, place in a bowl and drizzle with the dressing. Sprinkle chopped greens on top. Gently mix with a serving spoon and serve.

Notes

I love the garlicky taste in this tomato salad but I understand that not everyone may enjoy the harshness of the garlic or you may want to avoid the garlicky smell on your breath. It's easy to fix this by tempering your garlic.  You can temper the garlic by blanching whole cloves in milk for 5 minutes, blanching them in water for 5 minutes, or microwaving the cloves in a small bowl for 2 to 3 minutes, or until warm to the touch but not cooked.
