It's easy to fix this by tempering your garlic. You can temper the garlic by blanching whole cloves in milk for 5 minutes, blanching them in water for 5 minutes, or microwaving the cloves in a small bowl for 2 to 3 minutes, or until warm to the touch but not cooked.
